Pumpkin Cornbread

 
Ingredients -
1-1/2 cups Self-Rising Cornmeal
1/2 cup Whole Wheat Flour
1 tablespoon Baking Powder
3 tablespoons White Sugar
1 teaspoon Ground Cinnamon
1 teaspoon Sea Salt
1 large Egg, beaten
3 tablespoons Vegetable Oil
3/4 cup Canned Pumpkin
1-1/2 cups Whole Milk
 
Preparation:

1. Preheat the oven to 350 degrees.

2. In a large mixing bowl, sift together the cornmeal, flour, baking powder, sugar, cinnamon and salt.

3. Add the egg, oil, milk and pumpkin to the dry ingredients quickly and stir to combine, leaving a few lumps.

4. Transfer the mixture to an 8 inch square pan.

5. Bake for 30 to 35 minutes or until golden brown.

6. Remove from the oven and cool for 10 minutes.

7. Serve.
