Old Fashioned Buttermilk Cornbread

 
Ingredients -
1/4 pound Salted Butter
2/3 cup Granulated Sugar
2 Eggs, beaten
1 cup Buttermilk
1/ 2 teaspoon Baking Soda
1 cup Cornmeal
1 cup All-Purpose Flour
1/2 teaspoon Coarse Salt
 
Preparation:

1. Preheat the oven to 375 degrees.

2. Spray an 8 inch baking pan with non stick cooking spray.

3. In a large skillet, melt the butter.

4. Remove the skillet from the heat and stir in the sugar.

5. Beat the eggs in quickly until the mixture is well blended.

6. Combine the buttermilk and the baking soda the pour the mixture into the skillet and stir well to combine.

7. Add the cornmeal, flour and salt and blend well, but a few lumps remain.

8. Transfer the batter to the prepared baking dish.

9. Bake for 30 to 40 minutes or until when you stick a knife in the center comes out clean and is golden brown.
