Green Pepper and Cheddar Cornbread

 
Ingredients -
1 cup Finely Chopped Green Pepper
1/2 cup Chopped Yellow Onion
3 tablespoons Salted Butter
1 cup Yellow Cornmeal
1/2 teaspoon Coarse Salt
1 cup Plain Yogurt
4 teaspoons Baking Powder
1 Stick (1/2 cup) Butter, melted
2 Eggs, well beaten
1/4 pound Sharp Cheddar Cheese, very finely diced
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Spray very generously an 8 inch square pan with non-stick cooking spray.

3. Using 3 tablespoons, sauté the green pepper until the onion is tender which usually takes about 10 minutes.

4. Remove from the heat and set to the side.

5. Add the rest of the ingredients and mix well to combine.

6. Pour this mixture into the baking dish.

7. Bake for 25 to 30 minutes or until a knife inserted in the center comes out clean.

8. Serve and enjoy.
