Easy Mexican Cornbread Casserole

 
Ingredients -
1 pound Ground Beef
1/4 cup Chopped Onion
2 tablespoons Chopped Green Chilies
2 Medium Eggs, beaten
1 (16 ounces) can Creamed Corn
2/3 cup Whole Milk
1 package Cornbread Mix
4 slices American Cheese
 
Preparation:

1. Preheat the oven to 425 degrees.

2. In a large skillet brown the beef until crumbly.

3. Drain off all of the excess fat.

4. Add the green chilies and onion.

5. In a large bowl, combine the eggs, ½ of the can of creamed corn and the cornbread.

6. Mix until just moistened.

7. Transfer 1/2 of the cornbread into a 9 inch baking pan.

8. Top with the beef, cheese slices and the remaining creamed corn.

9. Place the rest of the cornbread mixture evenly over the top.

10. Bake for approximately 25 to 30 minutes or until a toothpick inserted in the center comes out clean and is golden brown.
