Cornbread Muffins

 
Ingredients -

1/2 cup Butter, softened
2/3 cup White Sugar
1/4 cup Honey
2 Eggs
1/2 teaspoon Salt
1-1/2 cups All-Purpose Flour
3/4 cup Cornmeal
1/2 teaspoon Baking Powder
1/2 cup Milk
3/4 cup Frozen Corn Kernels, thawed

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Line a muffin pan with 12 muffin cups.

3. Cream together the butter, sugar, honey, eggs and salt in a large mixing bowl.

4. Add the flour, cornmeal and baking powder.

5. Blend well.

6. Pour in the milk and add the corn.

7. Spoon the batter into the muffin cups.

8. Bake for 20 minutes, or until a toothpick inserted into the center of the muffin comes out clean.

 



Cornbread Making Tip -
Sifting Flour

If a sifter is not available when it is time to sift flour, there are several other tools that can produce the same results. Pass the flour through a fine mesh sieve or a strainer to sift. Put flour into a bowl and toss in the air or shake the flour around to introduce air. Lastly, a wire whisk or fork can be used to break up any clumps.
