1. Turn the oven to 450 degrees and preheat.
2. Using a round iron skillet, add the shortening and melt in the preheated oven.
3. Combine the cornmeal, salt and baking soda together in a large bowl.
4. Add the egg and buttermilk.
5. Stir well to combine.
6. Remove the skillet from the oven.
7. Pour the cornmeal mixture into the skillet, stirring the shortening into the batter.
8. Bake for 35 to 40 minutes, or until the top has browned and feels firm when pressed.
9. Remove from the pan and allow to cool on a wire rack.
10. Cut into squares and serve.
