Classic Cornbread

 
Ingredients -

1 cup Cornmeal White or Yellow
1 cup All-Purpose Flour
2 teaspoons Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Kosher Salt
2 Large Eggs lightly beaten
1 cup Whole Milk
2 tablespoons Unsalted Butter, melted

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Spray a 10 inch square baking dish with non-stick cooking spray.

3. Whisk together the cornmeal, flour, baking powder, baking soda and salt in a large mixing bowl.

4. In a separate bowl, combine the eggs, milk and melted butter.

5. Whisk to combine.

6. Pour the egg mixture into the dry ingredients and stir until just moistened, being careful not to over mix.

7. Scrape the mixture into the pan, smoothing the surface.

8. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.

9. Remove the pan from the oven to a wire rack and allow to cool.

10. Cut into squares.

11. Serve and enjoy.

 



Cornbread Making Tip -
Sifting Flour

Sifting flour is helpful for breaking up clumps and adds air to flour that has become compacted from sitting. The end result of sifting flour is lighter and fluffier cakes and pastries. It also helps to make measurements more consistent.
