Broccoli Cheese Cornbread

 
Ingredients -

4 Eggs
1 (10 ounces) package chopped Frozen Broccoli, thawed and drained
1 cup Cottage Cheese
1 White or Yellow Onion, chopped
1/2 cup Butter, melted
1 (8.5 ounces) package Self-Rising Cornmeal
1 teaspoon Salt

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Spray an 11 x 7-inch glass baking dish with non-stick cooking spray.

3. Combine the cornmeal and salt in a large mixing bowl.

4. In another bowl, add the eggs, cottage cheese, onion and butter.

5. Stir well to combine.

6. Add the egg mixture to the flour mixture.

7. Add the broccoli and mix gently to combine.

8. Pour the mixture into the glass baking dish.

9. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.

10. Allow to cool for 15 minutes then cut into squares.

11. Serve and enjoy.
