Boston Cornbread

 
Ingredients -
Vegetable Oil Cooking Spray
2 cups Unbleached White Flour
1 tablespoon Baking Powder
3/4 teaspoon Coarse Salt
1 cup Stone-Ground Yellow Cornmeal
1/2 cup Sugar
2 Eggs
1 tablespoon melted Butter
1-1/2 cups Whole Milk or Half-and-Half
 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Spray a 9 inch square baking pan with non-stick cooking spray.

3. In a large bowl, sift the flour, baking powder and salt together.

4. Stir in the cornmeal and set to the side.

5. Whisk together the sugar, eggs, butter and milk in a small mixing bowl.

6. Add the sugar mixture to the flour mixture and mix to combine.

7. Transfer the mixture to the baking pan.

8. Bake the cornbread until deep golden brown, which take about 30 minutes.

9. Allow to cool, then cut into squares.

10. Serve and enjoy.

Measuring Flour

The most accurate way to measure flour is with a scale. Any kitchen scale will work to provide good results. Generally, one cup of all-purpose flour is equal to 4-1/2 ounces. Every type of flour will have a different weight and excess moisture may make the flour heavier on humid days.
