Amaranth Maple Cornbread

 
Ingredients -
2 cups Cornmeal
1-1/2 cups White Flour, unbleached
1 cup Amaranth
1 1/2 teaspoon Baking Powder
1/2 teaspoon Sea Salt
1 cup Buttermilk
2/3 cups Maple Syrup, good quality
1 tablespoon Vegetable Oil
2 Eggs
2 tablespoons Pecans, chopped
 
Preparation:

1. Preheat the oven to 400 degrees.

2. Place a 9x13 baking dish in the oven to preheat.

3. Combine the cornmeal, flower, amaranth, baking powder, and sea salt in a large mixing bowl and mix well.

4. Combine the buttermilk, maple syrup, vegetable oil and eggs and beat well to combine.

5. Transfer the egg mixture to the dry ingredients, stirring well to combine.

6. Pour the entire mixture into the preheated baking dish.

7. Sprinkle the chopped pecans evenly over the top.

8. Bake for 25 minutes, or until you can insert a toothpick in the center and it comes out clean.
